Sweet Omelette Pieces
In my fridge were 3 eggs and double cream that needed using up. In my cupboard is some icing sugar, and I have salt and honey as well. Hence I made sweet omelette pieces, as follows
Need
3 eggs
100ml double cream
sprinkle of salt
2 tspns icing sugar
A drizzle of honey
1. Pour the cream and sugar into a mixing bowl and combine the two
2. Separate the yolks from the whites and discard the yolks
3. Whisk the whites into the cream-sugar
4. Add the salt and whisk a bit more
5. Heat some oil in a small wok (I used extra virgin olive)
6. Pour in the mixture and stir/beat in the pan
7. As the mixture solidifies continue to stir and fold it, with the aim to break it up into little pieces
8. Pour in the honey - clear, not set - when the mixture is solidified
9 Keep stirring to get the pieces small and coated.
10. Pour into a dish and serve.
Now, I just ate it on its own because there is nothing else to eat with it, but I think it would work well as a sprinkle or a side to another dessert, like a syrup sponge, meringue and fruit, icecream, custard, or whatever you want to try
