Hi guys !.
Our family and everyone I asked might be cooking the pancakes different to the way people outside of the UK do it. It has to be in a large frying pan , at least 11 1/2 inches (29 cm). The batter must be put in JUST enough to cover the pan, making a nice thin pancake. Toss the pancake and when ready put on a plate. Add the taste of your choice, roll the pancake by hand into a inch and a half tube that goes flat and add a topping if you want. Our favorite is lemon juice with sugar sprinkled on top, roll the pancake and put more lemon and sugar on. Try it its nice.

Just for comparison purposes, what batter recipe do you guys use?
Mine's:
220g plain flour
400ml full-cream milk
150ml water
4 tbsp sugar
4 eggs
salt
80 g melted butter
Mix all together until smooth and lumpless. Makes about 20-24. For Pancake Day, we make 4 times this quantity. Whee!

Sweet or savoury pancake batter (about 6 pancakes)
1 cup of flour
2 cups of milk
1 large egg
2 tablespoons of extra virgin olive oil
a pinch of salt
mix well and leave to rest for about 20mins.
Olive oil for the pan

Rome, isnt the olive oil a bit too strong for the sweet pancakes?
I dont have a recipe written down, I just throw it together.

I find it ok, but that might be because we produce our own olive oil and it's quite delicate.

1 egg
1 cup (actual tea cup, smaller than measuring cups usually) flour
1 cup milk
pinch salt
whip together.
Oil for frying.
(Or just throw everything into a bowl without measuring....
)

Oh well I had no-one to stuff my big ole pancakes for me, so I had the whole pile I made all to myself - hooray!
