Accompaniments to butter and garlic fried chicken.

I've got this nice recipe for frying thinly sliced chicken breasts coated in seasoned flour in a frying pan with butter, garlic and sage. So far, though I've struggled to decide on the best accompaniments to go with it.

I've been using roasted potatoes and vegetables up to now. But, I find that this doesn't quite work as the overall meal is quite dry even though the chicken does taste really nice.

Does anyone have any suggestions please ?

Greek Orzo Salad

INGREDIENTS
1 1/2 cups uncooked orzo pasta
2 (6 ounce) cans marinated artichoke hearts
1 tomato, seeded and chopped
1 cucumber, seeded and chopped
1 red onion, chopped
1 cup crumbled feta cheese
1 (2 ounce) can black olives, drained
1/4 cup chopped fresh parsley
1 tablespoon lemon juice
1/2 teaspoon dried oregano
1/2 teaspoon lemon pepper
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Drain artichoke hearts, reserving liquid.
In large bowl combine pasta, artichoke hearts, tomato, cucumber, onion, feta, olives, parsley, lemon juice, oregano and lemon pepper. Toss and chill for 1 hour in refrigerator.
Just before serving, drizzle reserved artichoke marinade over salad

Cole Slaw

INGREDIENTS:
1 medium head cabbage
1 cup mayonnaise
2 to 3 tablespoons heavy cream
1/4 to 1/2 teaspoon celery seed
salt and pepper, to taste
PREPARATION:
Combine all ingredients, adding more mayonnaise if needed and just enough cream to make it creamy. Add seasonings. Taste and adjust seasonings. Refrigerate for at least 1 hour.

LEBANESE TABBOULEH

1/2 cup fine bulgur
3 tablespoons olive oil
1 cup boiling-hot water
2 cups finely chopped fresh flat-leaf parsley (from 3 bunches)
1/2 cup finely chopped fresh mint
2 medium tomatoes, cut into 1/4-inch pieces
1/2 seedless cucumber*, peeled, cored, and cut into 1/4-inch pieces
3 tablespoons fresh lemon juice
3/4 teaspoon salt
1/4 teaspoon black pepper

Stir together bulgur and 1 tablespoon oil in a heatproof bowl. Pour boiling water over, then cover bowl tightly with plastic wrap and let stand 15 minutes. Drain in a sieve, pressing on bulgur to remove any excess liquid.
Transfer bulgur to a bowl and toss with remaining ingredients, including 2 tablespoons oil, until combined well.

* These long, narrow cucumbers are often marketed as "European" and are usually sold in plastic wrap to protect their thin, delicate, unwaxed skin.

Thanks Venus, I like the Greek Orzo salad idea. Certainly lots of flavour and moisture in that. I think roasted vegetables could work quite nicely too perhaps.
