Garlic - are you supposed to pick out the centre part?

One time, a friend's mother insisted that whenever you used fresh garlic, you had to slice it in half, then remove the little inner green core from each side.  Then you could carry on as usual, be it slicing, pressing etc.  She claimed the innermost core makes the garlic bitter?

Has anyone else ever heard this?  It stuck in my mind and I've been removing the inner core off and on ever since.  Most chefs I observe on tv don't seem to bother.  Is she correct?  Is it an old wives tale?  I've tried using the garlic both ways and cannot taste a difference myself.

I do sometimes, especially if it's very green and fibrous.

Re: Garlic - are you supposed to pick out the centre part?

I sometimes take it out when it's green (like white rabbit), but I have no idea if it changes the flavor. I just found that the green part often comes out when cutting the clove as the texture is different. And in some cold dishes where I use thin slices (as when marinading feta in seasoned olive oil) I take out the greenish part for looks.
I never noticed a bitterness though when I did not take the part out wink

Apparently the inner part can cause indigestion problems. I usually remove it if its there.

I'm sure the "bitterness" bit isn't true, but when I do pick it out, it's because it's green like most of you.  Thanks for your thoughts!  smile
