How long can I keep a jar of opened tahini?

For a rather long time.
I can't really tell you, as I have used it before it went bad - but I don't use it too often.
I keep opened jars in the fridge though.

If you're planning on keeping it for ages between uses, pour in a bit of olive oil to form a seal across the top. We've had a jar in the fridge for months now, I only ever use a little bit when making hummous.

I am not sure that you even need the olive oil, as tahini tends to separate with the oil on top. So there really is a layer of oil sealing it already I think....
