cous cous?

i would like to try new foods and cous cous, seems nice any ideas for a cous cous salad?  smile

220g cous cous
300ml stock
6-10 chopped dried apricots
small handful currants (you can soak these in orange juice in advance if you like)
1/4 cucumber, diced small
2 spring onions, sliced thinly
2 cloves garlic, minced
1/2 medium red chilli, chopped finely
about 4 tbsp chopped parsley or coriander
2 tsp cider vinegar
2 tbsp olive oil

Pop the cous cous in a bowl, pour over the boiling stock, cover and leave to stand for five minutes.  Meanwhile, chop everything up, then combine.  This tends to be the general jist of my cous cous, but you really can add whatever you like.  A tiny pinch of mixed spice is good here too.

250g cous cous
250 ml water
5 ml olive oil
5 ml salt
60 g soft dried apricots - chopped
60 g toasted pinenuts or chopped almonds

Bring water to boil in shallow saucepan, then add salt and oil.
Remove saucepan from heat and stir in cous cous.
Cover with lid and leave to steam for 5 min, off the heat.
Fluff cous cous with a fork.
Re-heat in microwave on medium heat if needed.
Stir in chopped apricots and pinenuts. Serve
Serves 4 - 6.

This recipe was put up by a member whose name escapes me but it sounds good.

Herbed Nectarine and Feta Cous cous Salad

400 g cooked cous cous
4 nectarines, stoned and sliced - not too thinly
1 red onion finely sliced into rings
2 rounds of feta (can use slightly more)
1 bunch coriander, chopped
1 bunch flat parsley, chopped
1 bunch mint, chopped

Dressing:
50 ml verjuice
50 ml olive oil
5 ml fresh ginger grated
5 ml chilli flakes
15 ml ground cumin
salt and freshly ground black pepper to taste

Wait for cous cous to cool, then add onion, coriander, parsley and mint
Mix the dressing ingredients together.
Just before serving add nectarines and feta and then drizzle dressing over salad.

I know the box of cous cous says to boil water in a saucepan, add oil and salt and then cous cous off the heat and cover. That's the way I cooked it the first few times.
Now I "cook" it as does Anna. Place the cous cous in a bowl, add oil and salt and then pour on the boiling stock/water, cover and fork through with a small amount of marg/butter. Add extra ingredients. Saves washing up!

The salads sound yum.
