Turkish pide
Does anyone have a recipe for pide? It's sort of a cross between pizza and calzone.
Instead of the dough completely enveloping the filling as in calzone, pide's dough is folded over the filling at both ends and midway over the central part of the filling, leaving some filling exposed.
I have tried to adapt my pizza and calzone recipes, including using a pizza stone preheated for almost an hour in a 500C oven.
My Chez Panisse dough doesn't work with pide, either, but is brilliant with pizza and calzone.
Any ideas, suggestions or recipes are most welcome.

My grandmother lives in Sydney and buys Turkish bread and other goodies from a Turkish supermarket somewhere in Leichardt, I believe. I think they do all sorts of things, so it might be worth finding one near you and asking after a recipe or tips...?

Found this recipe online for pide dough.
4 tsp dry yeast
1/2 tsp sugar
1/2 cup warm water
1/2 cup unbleached all purpose flour
3 1/2 cups bread flour
1 tsp salt
3 tblsp olive oil
1 cup + 1 tblsp warm water
Method:
make sponge of the first 4 ingredients. Let set for 30 min.
In a large bowl, add bread flour and make a well.
Pour in sponge and and remaining ingredients. Knead until pliable.
Found it online so who knows?
When I typed in pide+recipe, I got a number of sites.

If you can get the dough right, try some chorizo, eggs and cheese on it. I had something similar to this on a trip to Famagusta with some Turkish Cypriot friends. I managed to get about the same taste in an omelet using the above ingredients, never did work out the bread recipe though.
