Thai Twisted Lime Chicken
For 2 people
Ingredients
2 medium chicken breasts
1 lime
2 cloves garlic
1 small piece of ginger (1/3 thumb size)
1/4 stalk lemongrass
1 tbsp Balsamic vinegar
2 tsns brown sugar
1 red bird eye chilli
Wholemeal rice (or whatever you prefer)
Method
Cut the chicken into medium-large square pieces
Add the vinegar and sugar to a mixing bowl
Grate the ginger and lemongrass into the bowl
Crush the garlic and add it to the bowl
Zest and juice the lime into the bowl
Mix the ingredients together, and add 2-3 tbsp of cold water
Heat up a medium size wok and add a 1 tbsp of sesame oil
When the pan is hot (about 1 minute) add the chicken and stir fry on a high heat
When the chicken is white, reduce heat to medium and add the sauce
Stir the sauce into the chicken then reduce to medium while you prepare the rice
Cook the rice to desired standard
Share rice into bowls and pour the chicken and sauce on top.

can you leave the chilli out? as i dont like spicy food and everything have some form of spice in it these days!

I don't see why not. It's a recipe, not a mathematical equation.
I've not tried this, but perhaps you could try adding sweet peppers instead of chilli? I'm saying that because I've got 3 sweet peppers, and having not eaten them before, I'd like to do something with them.
I'll think of something, just need to do a little research first to find out what they (apparently) taste like.

I tried three new things today
Sweet Peppers
Wine Vinegar
Star Anise
Not bad going, I'd say.
