ISO: corn bread cooked in cast-iron moulds

I inherited cast-iron "corn stick" moulds when my Mum died recently.

Anyone have a recipe (as low-fat as possible) to make corn bread sticks?

Since Mum was not known for her cooking skills or interest, I presume the moulds date back to my Nan (same as the gem scone moulds- another post), so they'd be circa 1920-30. I've cleaned them up with oil and a stiff brush and dried them off after rinsing in a hot oven.

Corn Sticks

INGREDIENTS:
1 egg
1 1/2 tablespoons shortening (1 tablespoon plus 1 1/2 teaspoons)
1 teaspoon sugar
1 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup all-purpose flour
1 cup cornmeal
1 cup buttermilk
PREPARATION:
Preheat oven to 400°. Place greased cornstick pans in the oven to heat while making batter. Beat egg, sugar and shortening together. Sift flour and meal together with salt and baking powder, then gradually add to other mixture, alternating with the buttermilk.
Pour into the hot cornstick pans and bake at 400° for 20 minutes
