Successful poached eggs

Dear Jamie, I'm translating your "Happy Days with the Naked Chef" in Romanian. It's not easy, because there are a lot of veggies that are not yet on the Romanian market or that have no name in Romanian since were never used here, but today, translating one of your salad recipes, I found your advice about poached eggs - that they must be very fresh to be successfully cooked.
Well, poached eggs are a Romanian speciality, that's why we call them "Romanian eyes" (fryed eggs and poached eggs are calle "eyes" (ochiuri-eye=ochi) in Romanian).
So, this is an advice to have successful poached eggs every time: boil them in salted water with a bit of vinegar. This also adds to the flavour of the poached eggs.
