Kale and pasta recipe wanted

Unlike Maree, I have Kale which I will soon need to use in order to plant my Spring and Summer garden.  I've only ever used it in a soup once as it's rather new to me and we just planted it last fall for something new.
I love any cruciferous and pasta dishes and will appreciate your suggestions.  Thanks,
Eddie

Pasta with Kale

    * 1/2 cup sun-dried tomatoes or two-three tbsp. sun-dried tomatoes pesto
    * 1 pound pasta (penne, twists, farfalle, angel hair, etc...)
    * 2 tbsp. olive oil
    * 1/2 tsp. hot red pepper flakes or powder
    * 1 large onion, thinly sliced
    * 4 cloves garlic, minced
    * 1 pound kale, coarse stems and midribs removed, coarsely chopped
    * 2 tbsp. capers with 1 tbsp of their juice (or vinegar) salt to taste
    * 3/4 cup parmesan cheese

Soak the sun-dried tomatoes in hot water until they are soft, about 10 min. Drain, cut them into pieces and reserve.

Begin cooking the pasta. While the pasta is cooking, heat the olive oil in a large skillet and saute' the onion until it is golden. Add the red pepper flakes or powder and the tomatoes or the tomato pesto, and stir-fry for 1-2 minutes.

Add the kale, tossing well to wilt. Add the garlic and cook, stirring frequently for about 5 minutes. Add the capers and their juice and remove from heat.

When the pasta is cooked al dente, drain and mix it with the kale. Serve with parmesan cheese.

Kale is also yummy in strifry dish, and the young leaves are nice as a salad green as well.
But cooked with potatoes and then mashed together, with some butter, nutmeg and s&p is my alltime favourite. Just add the kale on top of the boiling potatoes for the last 6 minutes or so. Then drain (keep some water aside to add to the mash for extra moisture) amd mash. Serve with grilled merguez, mustard and or gravy and very crispy bacon bits.

Thanks, Sereh.  What is merguez?

PS  I miss the Netherlands.  Haven't been in years and would love a nice fried herring about now!

Fried herring? I know them salted and smoked, but fried is new to me! Anyway, merguez sausages are small beef or lamb sausages, flavoured with cumin, cilantro and onion. You can use any kind of flavoured sausage, this one is a typical mediterranean (Magreb) one.
