Pasta Sauce

This is a basic sauce I did for breakfast this (up at 1pm after getting to sleep at 6am. It's become a frequent occurrence)


1 pack oyster mushrooms
2 courgettes
10 vine tomatoes
1 tbsp red wine vinegar
1 orange
1 clove garlic


Cut the veg into small pieces and place in a mixing bowl
Juice the orange, crush the garlic and add them to the bowl with the vinegar
Mix thoroughly
Place in a saucepan on a high heat, stirring intermittantly
When the sauce begins to boil reduce to simmer
Place the lid on the pan and leave to simmer for 10 minutes
Blend the sauce until it is relatively smooth (ie no lumps and thick)
Serve with cooked pasta.

If you want, you can boost the flavour by adding a small tin of tomato puree and 1 glass of red wine mixed with 2 tsp caster sugar.

I would have liked to try shitake mushrooms, but they don't sell them at ASDA. Maybe Marks and Spencers will...
