Slow Cooking

Hi, Has anyone ever tried to roast beef in a slow cooker, just bought one and dying to try it out. I have a 4lb joint of topside I'd like to try but have,nt a clue where to start.  Any help appreciated help

Beef Roast with Root Vegetables

Recipe Summary
Difficulty: Easy
Prep Time: 20 minutes
Cook Time: 12 hours
Yield: 4 servings (with leftovers for 2 additional meals)

 
1/2 cup chopped onion
2 large sweet potatoes, cut into 2-inch pieces
2 parsnips, peeled and chopped
1 celery root (celeriac), peeled and chopped
1 (5-pound) boneless beef roast, trimmed of fat
Salt and ground black pepper
3 tablespoons all-purpose flour
1 (14-ounce) can diced tomatoes
1/3 cup maple syrup
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder

Arrange onion, sweet potatoes, parsnips and celery root in bottom of slow cooker. Season beef all over with salt and black pepper. Rub flour all over beef. Place roast on top of vegetables in slow cooker.
Whisk together tomatoes, maple syrup, chili powder, cumin, garlic powder, and onion powder. Pour mixture over beef.
Cover and cook on LOW for 12 hours or on HIGH for 8 hours.
Remove beef from slow cooker and shred with 2 forks. Serve 1/3 of shredded beef with this meal (and all of the vegetables) and refrigerate remaining beef for another use.

1 (3-pound) boneless chuck roast
1 1/2 teaspoons House seasoning, recipe follows
1/4 cup vegetable oil
1 onion, thinly sliced
3 bay leaves
3 or 4 beef bouillon cubes, crushed
2 garlic cloves, crushed
1 (10 3/4-ounce) can condensed cream of mushroom soup
1/2 cup Chardonnay

Sprinkle roast on all sides with house seasoning. Using a skillet over high heat, sear roast until brown in oil. Place roast in a slow cooker, and layer onions, bay leaves, crushed bouillon cubes, garlic, and cream of mushroom soup. Add the Chardonnay and cover with enough water to cover all of the ingredients. Cook on the low setting for 8 hours.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months

Slow Cooker Pot Roast

INGREDIENTS
4 pounds chuck roast
salt and pepper to taste
1 packet dry onion soup mix
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped
DIRECTIONS
Take the chuck roast and season with salt and pepper to taste. Brown on all sides in a large skillet over high heat.
Place in the slow cooker and add the soup mix, water, carrots, onion, potatoes and celery.
Cover and cook on low setting for 8 to 10 hours.

Crockpot Savory Pot Roast

INGREDIENTS:

3 lb. boneless beef chuck roast
1 Tbsp. olive oil
8 small potatoes, cut in half
3 cups baby carrots
1 onion, chopped
3 cloves garlic, minced
5 oz. jar prepared horseradish
1/2 tsp. salt
1/4 tsp. pepper
1 cup water
PREPARATION:
Heat oil in a large skillet and brown the roast about 10 minutes, turning occasionally, until browned. Place vegetables in the crockpot. Place beef on top of vegetables. Mix together horseradish, salt and pepper in a small bowl and spread over the beef.
Pour water over all. Cover slow cooker and cook on low heat for 8-10 hours until everything is tender

Crockpot Garlic Beef

5 to 6 lbs beef chuck roast, cut into small chunks
1/4 cup mustard
1 cup water
8 -10 garlic cloves, sliced

Combine all ingredients in your slow cooker. Cover and cook for 6 to 8 hours

Variation: add 1 cup of BBQ sauce or 1 cup of soy sauce .

Hi,

In the end I simply trimmed off any bits of fat, browned the meat off to seal in the flavour and put it in the slow cooker on top of an inverted saucer (so it wasnt sitting in any fat or juices)  I cooked it overnight on the slow setting for about 14 hrs in total.

The beef I have to say was so moist and tender it was delicious - but the gravy, made from the juices was, I have to say the very best I have ever tasted. Give it a try and let me know what you think.
