Chicken and Sliced Tomatoes in Red Wine

Ingredients

1 glass red wine
2 chicken breasts
3 beef tomatoes
1/2 medium brown onion
1 small handful dried curry leaves
1 clove garlic

Method

Slice the tomatoes
Slice and dice the onion
Crush the garlic and curry leaves
Combine tomatoes, garlic, onion, leaves and wine in a mixing bowl
Place the chicken in a tub
Pour the contents of the mixing bowl on top
Cover and leave in fridge for 2 hours
Pre-heat oven to gas mark 5
Roast in centre of oven for 35-40 minutes
Serve by placing a breast in the centre of each plate, spooning the veg on top to form a thick layer (think of it like a pie crust) then drizzle the wine to splash down the sides.

Just add mushrooms, olive oil and a little brandy - et voila - oven baked Chicken Marengo smile

I've been contemplating a dish with wine and brandy, but didn't expect the two would go together.

I made a delicious chunky plum sauce about half twelve last night that I'm going to try and make into a pie tonight (If I get the chance - Home from work at 7, off to gym at 7.30, back by 10, cook tea)

I'll post that recipe up when it's done. I already have the recipe for the sauce recorded though, so it's mostly written out.
