Re: Veggie Recipes

How about a spinach and swet potatoe curry

This is quick and easy

2 orange-fleshed  sweet potatoes, cut into chunks
200g spinach, washed & roughly chopped
4 naan bread , warmed through
400g tin coconut milk
1 onion, finely sliced
2-3 madras curry paste, depending on how hot you like your curry

Fry the onions until very soft, about 8 minutes. Stir in the paste and fry for 2 minutes. Add the coconut milk and sweet potatoes and cook until just tender, about 10 minutes. Stir through the spinach until wilted. Serve with naan breads.

or

Silvao Franco's Mediterranean Basil Pasta

2  red peppers, seeded and cut into chunks
2 red onions, cut into wedges
2 mild red chillies, seeded and diced
3 garlic cloves, coarsley chopped
1 tsp golden caster sugar
2 tbsp olive oil, plus extra to serve
1kg small ripe tomatoes, quartered
350g dried pasta
A handful of fresh basil leaves and 2 tbsp grated parmesan, to serve

1 To roast the veg, preheat the oven to 200C/gas 6/fan 180C. Scatter the peppers, red onions, chillies and garlic in a large roasting tin. Sprinkle with sugar, drizzle over the oil and season well with salt and pepper. Roast for 15 minutes, toss in the tomatoes and roast for another 15 minutes until everything is starting to soften and look golden.
While the vegetables are roasting, cook the pasta in a large pan of salted boiling water according to packet instructions, until tender but still with a bit of bite. Drain well.
Remove the vegetables from the oven, tip in the pasta and toss lightly together. Tear the basil leaves on top and sprinkle with parmesan to serve. If you have any leftovers it makes a great cold pasta salad - just moisten with extra olive oil if needed.

Re: Veggie Recipes

Have a look on this site for ideas - simon is a vego and has a few different recipes over the place

http://www.abc.net.au/tv/cookandchef/

This is another nice one by simon

This is one of Maggies - http://www.abc.net.au/tv/cookandchef/txt/s1917206.htm

I made it Monday night and it was wonderful - even my partner who does not like eggplant enjoyed it. The one change I made was to roast some red capsicum and lay slices between the layers of aubergine and zucchini. I also brushed evoo (extra virgin olive oil) on the eggplant and baked it in a very hot oven to cut down on the oil content.

enjoy

Re: Veggie Recipes

Thanks for all of your recipes.  It is good to see what other people like to cook.

I get a mind block when it comes to vegetarian meals.
