Irish Chicken

Hello all!
Some time ago i was having dinner with a friend of mine that has cooked this dish "Irish chicken" .
It is a normal chicken breast marinated with something such as honey too .
There is someone that knows the recipes?

If you type irish chicken into google it comes up with a list of recipies, there is even one cooked in irish cream liquer i am not convinced of that one. but have a look you might find what you are looking for

Christmas Irish Honey chicken with lemon and garlic

Preparation: 15 minutes

3 lemons
3 tablespoons of fresh rosemary, leaves stripped from the stalks.
3 tablespoons of clear honey
8 chicken thighs and drumsticks
50g of butter
2 cloves of garlic, finely chopped
750g of potatoes, scrubbed or peeled and cut into 2 cm square chunks

Preheat oven to 200 C or Gas mark 6.
Squeeze the juice from two of the lemons.
Gently melt the butter in a small saucepan, adding the lemon juice,
garlic, honey and rosemary.
Season well with salt and pepper.
Arrange the chicken in one layer in a shallow roasting tin. Place the
potatoes around the chicken and drizzle the lemony butter over the potatoes
and chicken turning them so they are evenly coated.
Cut the third lemon into wedges and put amongst the chicken and potatoes.
Roast the chicken for one hour until the juices run clear and the
potatoes golden. Stir twice during the cooking time.
Serve with a green salad and some crusty bread.

hello Mum..
thanks for the recipes, that is quite similar to the one of my friend, but there was a marinating processing with honey that i don't remind .
the wonder is was that the chicken was becoming really soft shocked and the taste was great! yummy  yummy
