Fast Pasta Sauces

Anyone got any recipes that won't take more than the pasta cooking time to make?

In a pan saute off a finely sliced onion and garlic, then add chopped mushroom and zucchini, add 1 -2 tins of Italian tomatoes with basil. Season with salt and pepper. Cook pasta according to directions and add to sauce. loosen sauce if needed with pasta water. garnish with parmesan cheese and a little shreeded basil. serve with some nice bread and a crisp salad. yummy

These two recipes are quick easy and tasty

Pesto, mushroom, and bacon pasta
(Serves about 4) 

4 heaped tablespoons sundried tomato pesto (or any pesto)
1/2 cup cream
2 rashers bacon, finely chopped (remove rind and most of fat)
2 medium-large mushrooms, finely chopped
1 onion, finely chopped
1 clove garlic, crushed
1 large ripe avocado, cut into quarters and diced
Fresh grated parmesan cheese (optional)
Pasta noodles (Enough for 4 serves)
Olive oil

Saute the onion, bacon and garlic in a very small amount of olive oil until softened. Add the mushrooms and saute until softened. Add the pesto and warm through. Stir in the cream and simmer on very low heat until slightly reduced and thickened, about 5-10 minutes. You can add more or less pesto and cream if you think it needs it. Add a pinch of salt and pepper. Cook the noodles in salted water until aldente. Put the noodles into the pan with the pesto sauce and combine. Serve topped with avocado and grated parmesan.

Sweet Roasted Tomato Pasta

Serves one

6 grape or cherry tomatoes (as many as you like really)
3 cloves garlic, chopped finely (adjust to your liking)
Handful fresh herbs - Parsley, thyme, rosemary, oregano, basil, chopped roughly
Parsley and basil stalks, chopped finely
grated fresh parmesan
EV Olive oil
Cooked thin spaghetti noodles

Cut tomatoes in half. Place in a small baking dish, drizzle with a little oil and season. Bake in a moderate oven until just starting to collapse. In a small saucepan warm a good glug of olive oil, about 1/4 cup. Add the garlic and herbs and warm until fragrant. Do not boil it!. Add the pasta and parmesan and stir through, season to taste.
