things we take for granted-in the kitchen

I noticed that many oof us have trouble finding some (basic) sometimes ingredients and search for alternatives....in some part of the world are considered basic and in other places people seem not to be familiar with it or cannot find it on the market shelves...

let's mention them in connection to where we are each one of us and...could also mention alternatives if any...

I see Semolina is not easy accessible to many in UK (??) - I always took it for granted here in Greece....

I don't see creme fresche here -people here use (too often than should if you ask me) creme legere...(milk creme either full/low fat)

what do you find hard to find?

polenta used to be hard to find

good tamari (gluten free soy sauce) is difficult

creme fraiche is less common, it's available but i think it costs too much to be stocked regularly.

Fresh dairy products are so easy to come buy in the UK - I couldn't find double (heavy) cream or creme fraiche anywhere in Italy.

John, I'm curious, I saw containers of bechamel in Italy, is it any good pre-made?

I'm not sure, I never tried it - I guess it would be OK because Italians have pretty high standards where food is concerned.

Polenta is d@mn difficult to find here in Greece, haven't found any in 1 year I'm searching...

Creme fresche is nowhere in Greece too...

Natural yogurt with sheep's milk is everywhere and amazing for you health here in Greece, don't know in other countries...full of probiotics(lactobaccilus mainly)

Some spices are difficult to find like black cumin or black cardamon, I have found in one store only in Patras.

Sherry vinegar is the tough one for us, as I have several recipes that call for it. Actually, everything a little out of the ordinary is difficult to find here in regional Australia.

Any substitue recommendations?

I could never find fresh milk in Sicily.  All they had was Parmalat in a box.
