The Meatloaf Thread
My latest meatloaf recipe:
2 pounds Ground Chuck
1 Large Onion, chopped
5 Cloves Garlic
6 Shallots, chopped
Splosh of Red Wine
2 Large Free Range Eggs
1 - 6 ounce can Tomato Paste (reserve 1/3 of the can)
1 - 28 ounce can Italian Plum Tomatoes, whole, peeled, drained and broken into pieces with your hands (reserve some of the liquid)
Approx. 2 T. Dried Greek Oregano
Salt and Pepper
3 Slices Whole Grain Bread, soaked in milk, squeezed and crumbled
Olive Oil for sauteeing
Saute the onions, shallots, garlic and oregano in olive oil, add all but about 1/3 of the can of tomato paste, the plum tomatoes, cook a few minutes, add the wine, stir and reduce until this mixture is darker in color and thick. Spread this on your cutting board to cool. Beat the eggs lightly with salt and pepper in a large bowl, add the meat, bread and cooked tomato mixture. Form a loaf by placing your meat mixture in a bread tin coated in wax paper, chill in the refrigerator. Unmold your loaf onto a baking sheet. Stir a small amount of the liquid from the canned tomatoes into the reserved tomato paste, coat the meatloaf with this mixture. Bake at 350 F. or 180 C. for one hour or until the meatloaf is just cooked through. Cool for a few minutes before slicing.

Splosh = whatever you will afford from the bottle you're drinking.
Ground chuck = Mince of 80% beef 20 % fat. As in 'chuck blade roast' which btw, makes a superb beouff bourg, not the mince, the whole cut.
Use white wine or leave the wine out.

Honey Mustard Meatloaf
Ingredients:
* 1 1/2 pounds lean ground beef or combination of beef and turkey
* 1/3 cup dry bread crumbs, plain or seasoned
* 2 eggs
* 1/2 cup chopped onion
* 1 teaspoon chopped dried leaf basil, or less if bread crumbs are seasoned
* 1/2 teaspoon seasoned or plain salt
* 1/4 teaspoon pepper
* 3 tablespoons Dijon style mustard
* 3 tablespoons honey
* 2 tablespoons finely chopped green onion
Preheat oven to 350°. Combine ground beef, bread crumbs, onions, basil, salt, and pepper. Stir in eggs, mixing gently but thoroughly. Shape into loaf. Place loaf in baking pan. Combine honey and mustard, brush half of the mixture on loaf. Bake at 350° for 30 minutes. Brush with remaining honey and mustard mixture. Bake for 30 to 45 minutes longer. Remove from oven and sprinkle chopped green onion. Serves 6 to 8.

chuck seems to be a name for cuts from the shoulder of beef or what we call blade roasts and steaks here in Canada.. I think it is particular to USA to call it chuck though..

Turkey Meatloaf
2 pounds of Ground Turkey (dark and white meat) or substitute 1/2 pound with Ground Pork
1 Small Onion
1 Medium Carrot
2 Stalks Celery
5 Cloves Garlic
1/4 Cup Cilantro Leaves, chopped
1 - 2 Sprigs fresh Thyme Leaves, chopped
1 T. Soy Sauce
!. T. Woresterchire Sauce
1 Bunch Scalliions, sliced thinly
3 Slices bread, soaked in milk or water, squeezed, crumbled
2 Eggs
1/4 Cup Grated Parmesan
Option 1: Approx. 1/2 Cup Soft Tofu added to the meat mix
Option 2: Terriyaki Sauce used as a glaze (low sodium variety)
Chop the onion, carrot, celery and garlic finely in food processor. Saute briefly in olive oil, spread on a board or plate to cool. Mix this with the remaining ingredients. Form a free-form loaf, place on a baking sheet or if you prefer in an oiled bread pan and bake about one hour at 350F. or 180 C. until cooked through.

My mamma makes exactly the same meatloaf as MsPabs (the 1st one)!!
But she cooks it in a large saucepan instead, sort of stewed loaf, then slices it when it's cold and warms up the sauce and puts the slices back in. It's a great recipe for a budget because you can make a BIG batch and freeze, in fact my mum makes loads of it and then gives us it in tubs and most times she ends up giving a tub of it to guests.
She's had to teach my sisters in law to make it because my brothers go on and on about it and their kids love it too!!!!
And if you can't be bothered to cook it's easy, eat it cold in sarnies the next day
I remember watching "Happy Days" as a kid, and they would frown and whine if their mum made meatloaf, and I couldn't understand why, in our house we'd kill for the last slice!!

It's from the shoulder and neck, the chuck blade roast is very flavorful, but takes a slow braise to make it tender.

Country Meat Loaf
Ingredients:
* 2 tablespoons butter
* 4 to 8 ounces sliced mushrooms
* 1 cup chopped onion
* 1 cup thinly sliced celery
* 1 cup shredded carrots
* 2 tablespoons water
* 2 pounds lean ground beef
* 1/2 cup all-purpose flour
* 1 1/2 teaspoons salt
* 1 teaspoon seasoned salt
* 1 teaspoon dried parsley flakes
* 1/2 teaspoon tarragon or thyme
* 2 tablespoons soy sauce
Preparation:
In a skillet, combine butter, mushrooms, onion, celery, carrots, and water; heat to boiling. Reduce heat, cover, and simmer for 10 minutes, until vegetables are crisp-tender. Combine ground beef, flour, salt, seasoned salt, parsley, tarragon or thyme, and soy sauce in a large bowl; add vegetable mixture and gently mix meat loaf mixture together. On a greased pan, shape into a meat loaf. Bake at 350° for 1 hour.
Meat loaf recipe serves 6 to 8.
