Re: Hellooo!From Swedwen.

Most of us started like that"swed"absolute beginners as far as loading fotos, -20 is very very freddo for me
so I give you la ricetta dei gnocchi:
the percentage should be like this 2 kg flour for 7,5 kg potatoes (this is the amount for the children in nursery school)
1 egg for kg potatoes

boil the potatoes in salted water
pass them with a masher
let them cool on the wodden table where you make pasta, with some flour underneath
add eggs
add flour (it should be the same volume potatoes  + the same amount/volume flour)

knead them rapidly and do not add too much flour, they only have to stay toghether

cut a piece from the dough like a brick, cut strips a little thick and make long rolls, put them one near the other then start cutting little pieces....... there they are, those are gnocchi. Now you could lay on trays well apart from one another and then once frozen put them in sacchhetti or

you can boil them in salted water and if you do not eat immediately let them cool in running cold water in a salad spinner or a colander until cold inside, open one and taste. Put them in a bowl add a little oil  mix by hand to oil all of them not to let them stick together

they last 7 days + or - in fridge

to be eaten with tomato sauce + sage and butter melted on top obviously parmesan cheese generously spread on each plate

ask if you need more details (they are ready when they float on top of your boiling water pan) big_smile
