White Chocolate Cashew Cookies
1 cup gluten free flour
1 cup almond meal
½ tsp baking soda
¼ tsp salt
½ cup chopped cashews
½ cup chopped white chocolate
½ cup soft butter
1/3 cup honey
1 tsp vanilla
1 egg, beaten
Preheat oven to 350F and line a baking sheet with parchment paper.
Combine the dry ingredients: flour, almond meal, baking soda, salt, cashews and chocolate chunks. Mix well.
Combine the wet ingredients: vanilla, beaten egg, honey and butter. Beat until well mixed.
Add the wet ingredients to the dry ingredients and mix thoroughly.
Drop the cookie dough onto the parchment paper by the spoonful. Bake for 10 to 12 minutes. Remove to cooling rack.
The cookies should be lightly browned and chewy. Makes 2 dozen.

All the recipes on my web site are Wheat Free and Gluten Free. There are bread basics including, yeast bread, soda bread, unleavened flat bread, pizza crust, potato dough and numerous desserts. There are also snack foods, soups, salads, and main courses. I hope you find them all useful.

I hope that you are adjusting to the new diet well! It can be challenging at first, but I have found it to be a blessing in disguise - causing me to take a closer look at what I eat and branch out into trying new foods and cuisines! Have you been experimenting with different types of grains? Some of my personal favorites: millet, quinoa, amaranth, teff, wild rice.
There are a ton of great gluten-free cookbooks out there. I really like "The Gluten-Free Gourmet" series, as well as "Flying Apron's Gluten-Free and Vegan Baking Book" for delicious breads, cakes, cookies, and other treats.
Another really helpful resource is Dr. Wangen's book "Healthier Without Wheat." This book really helped me with clarifying the information behind wheat and gluten intolerances. You might also check out www.innatehealthfoundation.org and www.IBS treatmentcenter.com for further information.

Thanks for that Kathryn and welcome to the forums. I think I am adjusting to the new diet quite well - in fact finding it does me a lot of good. I dont have any wheat free cookbooks - so thanks for that. Are you, yoursel, wheat free?
My biggest challenge was when I was on holiday recently in the US but actuallly managed fine.
