I swear by my Imperia which I've had for at least 15 years.

I love that philosophy mada, there is nothing more satisfying than finally working out the one you want.
I am also investigating pasta machines, but I am about three levels below Kye and husband I think. But I am excited about looking at the amazing shop I found when trying to get my pressure cooker ring. It is full of wine making and salami making equipment as well as every Italian type cooking thing.
Do you want to pop over to Melbourne Kye? Bring your husband and we can check out the pasta makers at this little shop! You can teach me all about them too! smile

I also have an Imperia, not new, but wouldn't change it for worlds!

Re: Pasta machine, which one should we choose?

I did the pasta making class at Recipease and the lady that taught us how to make pasta said they had tried many different pasta makers and they all had problems, and now they only use Imperia. So that is the one I will be getting. See this link on Amazon, lots of reviews from people too, and has average of 4.5 stars out of 5.

http://www.amazon.co.uk/Imperia-Italian … amp;sr=1-1

It is 50 at recipease, 40 on Amazon, but goes on special occasionally for around 30 on Amazon, and keep an eye on ebay as people sell unwanted ones on there that they were given as gifts, by end of auction new ones including postage usually cost around 30.

It bolts on to the benchtop and there's lots of different attachments if that is what he wants. I personally would just have the spaghetti and fettucine cutters and do ravioli etc all by hand.

Jutta, I'm with you on the ravioli attachment.  It doesn't  work all that well.  I ended up wasting so much dough and stuffing trying to use it.  I think amano is the way to go.

Re: Pasta machine, which one should we choose?

Hello!
i had to go to Constante's (the shop I mentioned above) today, to see if they had my pressure cooker seal in (maybe in two weeks).
And there on display was the most wonderful Imperia Restaurant Pasta Machine.
I could see at once why everyone above said it was the best brand.
Magnificent,
but not for me.
But also on the table were lovely little pasta machines that would fit so nicely into my kitchen. It is darling! And the lovely shop people showed it off to me and gave me advice and recipes.
And I bought one!

I will use it tomorrow I hope! smile
