In response to the Copha questions away, way back on page 10 of this thread (Chocolate Pretzels recipe), Copha isn't generally easily available outside Australia. It's 100% pure hydrogenated coconut fat :-D Good stuff! Entire generations of Australians have been brought up on it! I went hunting once to see if I could find a UK equivalent but the closest suggestion I could find was to buy a tin of coconut milk/cream, let it sit for a while (not sure how long - until the water separates from the fat), then drain off the water and use the remaining creamy solidy bit. I don't think butter would be an appropriate substitute because you'd lose the coconutty flavour. Hope this helps someone!

Self raising is all purpose flour with baking powder added. To make your own just add 2 tsp of baking powder to each cup of flour.

These are suitable for vegans, but most people seem to love them!
Makes 18-20
Oven: 200 C/Gas 6
75g/3oz/half cup dried dates
75g walnuts, finely chopped
3 medium bananas, mashed
175g/6oz/2 cups oats
150ml/quarter pint/ half cup olive or sunflower oil
1 tsp vanilla essence
Mix everything together really well and put tablespoons of the mixture onto an oiled baking sheet. Flatten them down a bit and bake for about 20 minutes, until golden.

Welcome to the forums, Juanjleslie. Making cookies is generally easy and satisfying.
There are all kinds and if you've got kids in the house, it's a great way to introduce them to baking as it's tasty fun.

Hi Juanjleslie, and welcome to the forum from me too.
I agree with Eddie, baking with kids is great, in fact my children never had playdoh. If they wanted to do something like that, I'd make a batch of cookie dough (often with their help ), they'd play with it for a while, then eat the end results, though I always kept some dough back so we would have some uncontaminated cookies to eat
