I just made a lovely big batch of Ashen's smoked habanero sauce, with a few modifications:

on the barbecue, I smoked over indirect heat with hickory wood:
50 fresh habaneros
1 medium onion
20 cloves of garlic

Into the blender they went (I find the blender is better for liquefying the sauce than the food processor), along with:
40 more habaneros (raw)
juice of 4 limes and the zest of 2 (about 2/3 cup)
2/3 cup organic unfiltered apple cider vinegar
a few tablespoons of salt

Blend it well. Then I put it into a covered bowl on the counter for a few days to let it pickle a little bit. Then into small freezable jars for storage. This sauce is delicious, with a really smoky flavor and quite a bit of heat. I mixed one jar half-and-half with chipotle sauce from a previous experiment and that made an even smokier sauce, almost a barbeque sauce flavor but very, very hot. Those proportions made about 24 ounces of concentrated sauce, which should last me a few days at least ...
