It did not taste so eggy, but it was very delicious. Could have put more olive oil on the pastry though.
Afterall it was so easy to prepare. The only shame was, that there were not so many people to share the food with.

Eggs - great idea! I will have to try something new as I use eggs a lot in baking and ice cream making.
For those interested in making a souffle I recently made them for the first time using a Bill Granger recipe for raspberry souffles and they worked wonderfully and tasted fantastic. I wrote about it on my blog, and there are photos too, as I have some advice on how to prepare the ramekins. Here it is on my blog with a link to the recipe.

Also if you do a recipe that uses just egg yolks you can freeze the leftover egg whites (just label how many are in there). There are many things you can do with just egg whites like meringues, pavlovas, some biscuits/cookies, some cakes. If you have leftover yolks make custard or ice cream or even a proper hot chocolate. Here is my favourite ice cream recipe that is so easy to make and you do not have to make a custard so no chance of curdling and you can also do this one without an ice cream machine.

Hope that helps some of you with the concern of what to do with leftover whites or yolks.

Jutta, what a great post.
Between the both of you I have worked out that I want to make the pumpkin, spinach and feta quiche I ate once at a catered lunch and would love to replicate! I will make little quiches!

Yes, it is really a pity it's not possible to pass some pieces around and it's also too difficult to come over and pick them up.
The quiches sound also nice.

I am thinking of making egg and bacon pie as I saw a recipe in the cookbook The Free Range Cook which I have borrowed from the library and it looks great.
My Miss 4 finally tried some egg today and only would eat the white of the poached egg. Miss 2 hates egg and Miss 4 until now would also not eat them.

and the fact that my daughter is staying with me for a bit,
I decided to make an egg and bacon pie.
I was fascinated bu Mummza's traditional one she describes and links to in the thread link, but I want to make the sort my mum made.
Are you still planning to make one Jutta? It will be interesting to compare!
And O dear it is June here already! So I had better make it quickly! And we need some ideas for a challenge for June! What do you think?

I still need to make a souffle, never made one before and really want to try, perhaps that could be Junes challange.
In the UK its Fathers day on June the 19th and Armed forces day on June the 27th - perhaps something for these ?
