Ms.P. I will attempt them....eventually. Every time I go shopping at Williams Sonoma I feel tempted to buy a crepe pan...

I've never made but want to try:

King Cake
Cinnamon rolls

Cinnamon rolls are aromatic and incredibly delicious when homemade. You really don't need a crepe pan if you're going to make crepes once in a while. A saute pan works. Like pancakes, the first one in the pan is inferior, so make it small.

I dont' have any non stick pans, I'd be afraid they'd all be "the first".

Doesn't need non-stick. Use a good pan, heat it well, brush lightly with oil and for some reason, the first one seasons the pan, brush with your oil very lightly each time, if you add too much, mop it up with a paper towel first.

I have an assorted list of things on my wish list of dishes I want to make eventually

gravlax
proper miso soup. I have played around with soups with miso paste but never have made my own Dashi stock
Sushi
pizzelle( I even have one of the special electric waffle irons but still havn't gotten around to it)
Bluecheese Fresh cheese making in general but then innocculating my own bluecheese .. yummy
Smoked side Bacon
Peameal Bacon.
Pancetta Ever since Eddiestarted making it, I really wanted to try it.

I will add more as I think of it.

Oh this got me thinking. I think the main thing I've not made, and keep thinking I must try is a soufle, both sweet and savoury. I've never made anything Japanese either, but then I can't eat fish or seafood, so I guess that's put me off a bit. I did make some carpaccio for New Years Eve, which is something I've always been a little nervous about. But it turned out so well, I'll defintely do it again. Since this post i have made two meatloafs, following a thread of MsP's some time ago, i messed the first but the two others were perfect, the last i placed cabbage leaves on the bottom of the cooking dish and brought them over the loaf to seal.
It was delicious, served with boiled potatoes and a tomato sauce.

I was just thinking that I have never made a meatloaf either! Neither have I eaten one and it is quite a popular thing to eat here in the U.S. I've always wanted to make one.

I've always wanted to make a souffle but I am terrified.

I try my hand at various soups but I can never make them right. I love clam chowder but it was horrible when I made it. Same with mushroom soup.
