Alternatives for sea bass....
In JO's new book I found a great recipe for sea bass. I was at our local fish market and discovered that sea bass is approx. 15 euro per kilo
. Needing 1,5 - 2 kilogrammes for this, I hope somebody has a good alternative for sea bass.....
The recipe states you can use other fish, but gives no suggestions

Sea bream is probably closest, and is generally a little cheaper than sea bass - but depending on the recipe, there are lots of different types of white fish that could work.
Just remember to change the cooking time according to the weight of the fish/thickness of fillets.

Any flaky white fish will do. Personally I reach for halibut.

Rather than choosing a recipe and then shopping. Go shopping and let the freshest, in season and reasonably priced ingredients inspire a menu. ![]()

I agree with Pakman,
I am lucky to have a fishmonger who I could ask.
It is in her interest to tell me what works!
That way I am getting what is local and suitable for the recipe and my wallet!

mutton. what? it is an alternative.
ok more seriously.. is i the recipe from 30 minute meals.. sea bass with pancetta, fennel seed and lemon zest? I would think mahi mahi , or halibut would work well there . Great bit of fresh trout would be a really nice option too. that flavour combo and cooking method really would work with a lot of different fish I think. Halibut cheeks, if you could get them ,would be even better than the sea bass in my opinion.
