Preserving Jamie at Home barbecue sauce...
Hi there, I'd really like to make jars of the Jamie Oliver homemade barbecuse sauce as featured in Jamie at Home book to give to friends as presents, can anyone advise how long you think it will last and whether the jars need to be treated in anyway (other than being sterilised) as the ingredients aren't cooked at all?
Any advice gratefully received!

Ah thank you, I wanted to be doubly sure as it's a different recipe and the one from 'at home' doesn't get heated at all but if the method is the same that's brilliant! I'll get making!

Yeah, I noticed this one is cooked, I guess you can get away with not cooking if you are using it straight away.

The one in Jamie at Home is used as a marinade. I don't think it's a recipe designed for preserving in jars, although maybe it could be used that way if it were processed properly in a pressure canner . . . but I think you're safer choosing a recipe designed for canning for gifts.

Just read the recipe, one question, 6 cloves of what? In last line bellow. I assume garlic but we all know what happens when we ASSUME!!!
"Herbs and spices:
• 10 sprigs of fresh thyme or lemon thyme, leaves picked
• 10 sprigs of fresh rosemary, leaves picked
• a small bunch of fresh coriander
• 10 bay leaves
• 1 teaspoon cumin seeds
• 2 tablespoons fennel seeds
• 2 tablespoons smoked paprika
• 6 cloves"

Mark, it is '5 cloves', meaning 5 whole cloves (dry spice). The recipe also calls for a bulb of garlic which is more like 10 - 12 cloves of garlic.
