Gluten, wheat, yeast, soy, sugar free bread?

Hi,
I am an absolute bread fanatic but recently discovered that some long term health problems I have could be dramatically improved by eliminating some foods.

I have attempted to make my own bead using some of the ingredients below but the results were not very good to say the least!

I am not expecting miracles but can anyone help me come up with the best possible, gluten, wheat, yeast, soy, sugar free bread?

I can have anything from the list below?

Why not try almond bread?  A recipe I use (from Elana Amsterdam's Almond Flour Cookbook) goes as follows:

3/4 cup almond butter plus 1 extra tbspn
4 eggs
1/4 cup almond flour (ground almonds)
1/4 cup arrowroot
1/2 tspn baking soda/bicarbonate of soda
1/4 tspn salt
olive oil for greasing
1 tbspn almond flour

Firstly, using the olive oil and one of the extra tbspns almond flour, grease and flour a 2lb loaf tin.

Then put the almond butter into a large bowl and beat (an electric whisk is easiest) until it goes lighter in colour and creamier in texture.  Add the eggs one at a time, incorporating each one fully, and then mix in the dry ingredients.  Put the batter into the greased and floured tin, and put in the oven at 160C/350F for 40 - 45 mins until a knife or skewer inserted into the middle comes out clean.  Turn out onto a rack to cool.  This tastes like a dense, dark rye bread, and will keep for up to 7 days if wrapped tightly.  It also freezes well.

Thank you for the reply, I will give it a go!

To be honest, I am looking for something a little more adventurous to try.

Probably looking to create the impossible but I believe that from the list above and a little know how that there is a very good bread to be made.

Hi

My partner is extreme Celiac.
We have experimented with making breads in a bread machine and they are usually quite heavy and dense, they taste good though. We have not found a good commercially made Gluten free bread, that is why we tried to make our own.
I will try the recipe above.

My partner is a Gluten free vegetarian and it has been fun converting my cooking style and recipes to suit, they all work, it is not hard.

We would love Jamie to do a show or just an episode on Gluten free cooking.

You can try Julian Bakery Paleo Bread or Almond Bread it's free of all those products.

Buckwheat is really good and sweet, I recommend trying that and making it like the usual poundcake with eggs, yoghurt and a raising agent.

also, flaxseeds and potatoes make excellent little pan cakes. can you eat potatoes? mixing some boiled crushed potatoes inside the bread or potato flakes can help hold it together
