I need to think up a name for my supper: I cooked blackeyed beans and roasted small chunks of potato and kumara, and then mixed them together with a lemon chili dressing. Very yummy!
A couple of hours before I had a bowl of potsticker pork dumplings, so they might have been first course?

Last night, left over risotto was transformed into a crispy rice with mushroom omelette. Risotto added to a oil sprayed hot pan with ginger, chilli and onion and cooked until slightly crisp. Mushrooms (pre-sautéed)and a couple of beaten eggs added and cooked until eggs had set. Salad to follow.
Tonight, I won't finish work until late so will probably buy sushi on the way home.
