I have found this , you might have seen it already.
I have never tried black garlic and am interested to know what you think of it.
For those that dont know , black garlic from what I have read abou it is not a variety of garlic, but a bulb of carlic that has been very carefully aged .

Re: Black Garlic
Hello to you too bella
Mummz is right in saying that its from the same family 'type' but not exactly garlic.
Black garlic is just a family bulb that has been allowed to ferment, its sugars and acids after fermentation produce melanoidin, a dark-colored substance that is responsible for its colour.
All garlic is excellent health wise, fluids the blood. Black garlic doubles its white cousin though: 'In Taoism mythology, black garlic was rumored to grant immortality. We can’t promise you that, but there’s no doubt that black garlic is great for your health—it’s loaded with nearly twice as many antioxidants as raw garlic. It also contains S-Allycysteine, which is fancy talk for a natural compound that has been proven to be a factor in cancer prevention'.
Black garlic is very sweet and will give a syrupy taste to other aliments.

Re: Black Garlic
Thanks Kye, I had already had a quick look (but no recipes!) However the Australian places they mention selling it : 2 are in Melbourne. I will try my Asian grocery first, just in case.
I need something that 'fluids the blood' as part of my illness is thought to be low blood volume and difficulty of blood being able to get around the body. So black garlic might be useful! And delicious!
