Blueberry buns

I watched 'Jamie Oliver does Stockholm' last  night, and the blueberry bun recipe he used took 750gms of plain flour, he used 500gms to start, added the liquids and the blueberries, - then never told us what he did with the 250gms of left-over flour.
What did he do with it? I'm curious.

you add it to the dough mixture after the first addition is mixed well:
