Tonight I'm going to raid what's left in the cupboard and fridge and make falafel fritters:
800 g/1 lb 12 oz canned
chickpeas, drained
1 small onion, chopped
grated rind and juice of 1 lime
2 tsp ground coriander
2 tsp ground cumin
6 tbsp plain flour
4 tbsp olive oil
salt and pepper
4 sprigs fresh basil, to garnish.
tomato salsa, to serve.
Cous cous and a green salad.
Maree, I'm hoping to make these fritters soon. There's no way you'd be deep frying is there?
So I'm guessing non-stick pan or baked in the oven?

No deep frying here
. I used a non-stick fry pan which I brushed with canola oil. The sprays wreck non-stick surfaces.
Love all pulses. Have dried and tinned but tinned seem to be the first thing I reach for. Am lazy, busy (who isn't?) And sometimes I don't know the night before what I'll be doing the next night let alone what I'll be feeling like eating, so there goes the overnight soak.
Anyway, tonight I'm doing salt and pepper squid with a Thai-style salad.

Butternut and onion squash soup, sons added Foie Gras to melt...again.
Green apple and Foie Gras flan served with a mixed salad with fresh figs.
We have been indulging on Foie Gras for the last two days, not good for health, i will now hide the rest.
