I'm currently revisiting my love of "Indian" food, especially Anjum Anand who I discovered while trawling the aisles of Sainsburys, Tescos, Morrisons or some other supermarket when I was last in the UK.
That was before the "big two" here started selling cookbooks at hugely discounted prices.
So, tonight, it's her "Fluffy spinach koftas in a creamy tomato curry" ("I love Curry").
She uses ricotta for the koftas. I had some homemade paneer that needed using so I'm using it.
The sauce won't *really* be creamy because I'm omitting the double cream/ butter and adding a little vegetable stock.
To go with it, I'm making her aromatic rice pilaf from the same book (cumin seeds, cinnamon stick, cloves, bay leaves, cardamom pods, onion, carrot, peas and garam masala).
Left over lemon gelato to finish. Yes, I know it doesn't "go" but is a refreshing palate cleanser (it also needs to be used)

These all sound great to me! I'm not sure exactly what I'm having tonight..yesterday I was lazy and had Subway - whoops! lol

Lucy and I had chinese take out...General Tso Chicken and Shrimp with pork fried rice. Very good.

Last night we had pumpkin soup (that I had improvised some weeks back and frozen the leftovers) with roasted sunflower seeds added to the plate.
Not sure what to make today yet
