Jamie's Christmas Morning Waffles
Does anyone have the recipe for these which he cooked on last night's Christmas with Bells On" special (Australia)?
The phone rang just as he started to cook them
. What I noticed that was different was that he used bicarbonate/ baking powder for aeration rather than the usual separated eggs (the reason waffles don't appear often on the menu here). He also used whole eggs and cooked the (large) waffle in a grill pan.

I know I checked online for this recipe, and the Epic Hot Chocolate recipe is available, but the waffle recipe isn't. ![]()

Yes, I checked on line and in the Christmas edition of the magazine but couldn't find it, either.
Seems, from what I saw, much less mucking about than the usual "separating eggs" version of waffles.

Here we go: (if I got it right! I think I did!)
Put 2 eggs in a bowl, add 300ml milk and whisk together with a pinch of salt also.
Add 225g SR flour, and then immediately add 2 level tbsp (yes! tablespoons! I double checked!) of baking powder. Mix in.
Add 100g melted butter and whisk up to a beautiful thick batter.
Rest for 1/2 an hour. Airbubbles form.
If you have no waffle iron use a ridged griddle pan, or even a normal frypan.
Jamie uses a ridged griddle pan, 'buttered up and piping hot'. He scrapes all the batter into the pan and spreads it with the back of a big spoon to fill it all.
Heat goes down to medium. Cook 8 mins, turn it over and 8 minutes on the other side. Then another minute on each side to make it crisp on the outside and fluffy in the middle. (It is about 2cm at its thickest.)
Lift it out. Drizzle maple syrup over it and spread. Then he cut it into 'soldiers' to dip into the hot chocolate. ![]()

An update:
I halved the ingredients for a test batch prior to my "kids" coming up.
I used ( remember I halved Jamie's recipe as kindly posted by Joy) 50:50 melted butter : vegetable oil for heart health rather than waist health/size and also to lighten. Remember I live in the Southern Hemisphere. We're in the late 20Cs to mid 30Cs at the moment. Don't want heavy food.
Used a 27 year old electric waffle iron rather than the ribbed grill pan. Cooked as to instructions.
Served with Canadian maple syrup and berries. Jamie served with that mega rich hot chocolate. Different weather, different approach
Loved that I could have waffles without that hassle of separating the eggs and doing the "beating the egg whites thing".
Am not a morning person

Will definitely make again and introduce new textures and flavours.
