Chickpeas
An Indian friend of mine makes a dish that consists of chickpeas, cauliflower, eggplant, tomato, onion, turmeric, mustard seed and chilli powder over top of white rice. It is a great filling dish and of course vegetarian.
Any other ways to create this dish?

It's a really nice dish, but needs plenty of seasoning.
And I think it's nice to have something slightly sour to lift it - so I either add some tamarind, or serve it with natural yoghurt.

Thanks. I am more of a spicy food kind of guy. yes, it requires a tad amount of salt but if you use more chilli powder it cranks it up the heat to an intensity that gives it added flavor. Of course, your tongue has to be accustom to this type of heat.
