Lasagna Cupcakes! Jeez!
I'm telling you when you hear those 2 words together, sounds kinda disgusting but honestly i just found this recipe online for lasagna cupcakes, they are like individual lasagna bites lol they sound amazing! I'm just wondering if anyone has different variations of that recipe? the one i found is pretty basic, just ricotta, Parmesan, mozzarella and ground beef between wonton wrappers. Could we get creative?! ![]()

Lasagne cups do sound rather strange !
What about draping a part sheet of almost cooked pasta over an indervidual hole of a cupcake tin , putting in a little sauce then a circle of pasta , cheese , then a circle of pasta , some tiny meatballs plus sauce and then fold the edges of the sheet pasta over the top , scatter with cheese and than bake .
Similar I know but I think it might work .

that is a very cool concept.. the best part is that most people love the edge. what is better than a 360 * edge.
I will have to try this with an extra large muffin tin.

I would have to do it without the dry, overcooked edges, otherwise, it looks delicious. ![]()

I really really love the idea as well. You know how there are different renditions of your typical traditional lasagna? like zucchini lasagna, vegetarian lasagna etc. I'm just trying to come with ingredients that will make it a bit fancier. Other than your typical lasagna ingredients.

This would be nice with a creamy, cheesy salmon/leek/asparagus mix - maybe with creme fraiche, gruyere or emmethal . . . or spinach and cheese.

I love that idea! Yes! Cheesy Salmon. I guess then it would not really resemble a typical lasagna but still. Oh I also like the idea of spinach. Like ground beef, ricotta, mozzarella and spinach with perhaps instead of a store-bought pasta sauce, a home-made one with more herbs and spices. The recipe i found is kinda bland in that sense and it lacks veggies.
