Good old haggis!
I've changed my haggis cooking technique recently, as every time I try and heat one in hot water, I burst it (not good!). Now I take it out the skin, mash it into a casserole dish with a splash of water, top with mash, and bake. We call it a "bothy pie".
I know a similar method is suggested in Jamie's Great Britain, but we came up with it independently. It's much easier and stops the haggis drying out, as it can do if you bake it with no topping or just foil.
Neither of us likes neep, so we use roasted butternut squash instead! A noble alternative.

It dis ma hert guid tae see these fowk fae a corners o the world planning tae celebrate Burns' nicht wi haggis an a the trimmings. We're a Jock Tamson's bairns efter a. Jist dinnae tak it too serious. Burns wisnae some high-brow greetin-faced poet o the esoteric school. He wis a laugh. So hae a laugh, and we'll a laugh alang wi you.

lol... I have an excuse... nowt very guid though.. It was based on listening to my Grandfather who was scots on his mother side and yorkshire on his fathers.

you will probably like this story Hippytea.
He collapse a few days before he passed on but the circumstances before he collapsed we quite in keeping with his personality. He was in full highland dress and had just finished toasting the haggis at the burns night dinner of his retirement community. Apparently the last thing he was heard to say , was an off colour joke to a lady dinning companion about what a scotsman has under his kilt.

Troost me, nae whisky; it’s fur th' sake ay us aw! i watched billy connolly bein' interviewed lest nicht, whit a braw cheil. he also is allergic tae watter o' life, fur similar reasons. it’s bin sae lang since Ah hae hud haggis, 30 years ago. Ah did nae loch it as a bairn. hopefully loch black puddin' Ah will noo loch it. aiblins flamin' watter o' life oan it, is 'at possible? back tae films, try angels shaur, a superb film, involvin' watter o' life. what’s th' angels shaur? watch th' film.
