I made sweet potato hash for the first time. I've never like sweet potatoes the way my mom cooked them. An employee brought some yesterday to work and it was so good I had to try. Here is what I did:
2 medium sweet potatoes peeled and chopped (I popped them in the microwave for 2 minutes to soften them a bit)
1 small onion chopped
4 slices bacon sliced into small pieces (you can use more or less according to taste)
1 tbsp butter
1/4 cup water
1/4 cup bourbon
salt and pepper to taste
In a skillet brown the bacon and onions, when done to your likeness add in the sweet potatoes and water. Cover and cooked until potatoes are tender enough to mash. Uncover, add butter and bourbon. cook until the alcohol is cooked off. Salt and pepper to taste.
You could use veggie stock or maybe even a chicken stock in place of the water. You can also leave out the bourbon, but it adds great flavor.

skirt steak tacos with homemade guacamole. the marinade was adapted from a rick bayliss recipe and then the skirt was seared on my cast iron comal and sliced across the grain .

Crazy mash-up baked casserole to stretch the last few shreds of chicken in to one more dinner:
base -mirepoix, cheddar, mozzarella, pecorino romano, parmesan, eggs and milk and a few shreds of chicken
topping - wholegrain gluten-free biscuit dough flavored with lots of parsley, thyme, rosemary and chives and a little parmesan.
It was really good, even though it sounds awful. Steamed asparagus as well.

was large beans baked in the oven with tomato onions garlic parsley and carrots..., accompanied with feta cheese with olive oil and oregano, and a green mixed salad and some toasted bread on the side....a glass of good red wine....

Popping in because I have Shammy on my mind...Tasmania is suffering through bush fires
It has been superhot so it's all been simple panfried fish or chicken with various marinades & salads.
