Cres tasa

Anyone familiar with cres tasa or tassa? I found the following description and was interested because it might be a nice gluten free option but I've not found a recipe.

Cres tasa with porcini ragù and burrata, Il Bàcaro, Melbourne
“Cres tasa is a house-made diamond-shaped pasta made from polenta instead of flour. It also doesn’t contain eggs, so it’s vegan (normally, I feel, a swearword in the kitchen). To me, a great dish is something I want to eat every day, and this is definitely one.” Jason Jujnovich, Divido, Perth

Re: Cres tasa

Seems it's polenta pasta dough cut into triangles. Here's a recipe.

Re: Cres tasa

I havn't heard of it but the pictures of it on google look tasty.

Le Veneziane brand  has been highly recommended to me by an italian that is eating wheat free.  100% corn pasta from italy

Re: Cres tasa

The recipe in the link is not gluten free - it contains Tipo 00 flour.

I would be surprised if you could make pasta with no gluten, unless you use a gluten substitute like they do in commercial GF pasta. The gluten (or substitute) is very important in keeping it together when it's rolled that thin.

Re: Cres tasa

Here's a polenta gnocchi recipe - maybe you could tweak this to get something like what you're thinking of?

Re: Cres tasa

Doh!  oops I imagine you could use rice flour instead.

Adding the word "gluten" to a google search makes it hard to find polenta pasta dough with tons of hits.  hmm

Re: Cres tasa

I was expecting to find a recipe with gluten in it but was hoping it'd only be a little so that gluten free flour would work instead. The look of them in the magazine I have makes me thing there is some wheat flour in there - i was just hopeful.
