Re: THE gluten-free thread
scary. Mine was just 2 very long consultations like 3 hours each. then regular check ups. Cost me a small fortune but I needed to get to the bottom of things. Especially to why I was doing things right but not losing any weight.

Yes, welcome indeed - you really will feel better! Looks like quite a list of things you have to avoid, but it's all worth it if it helps ![]()

I had the test done with probes attached to my finger which showed allergy to dust mites (explains sneezing) also wheat which if I avoid prevents bloating and seems to help with weight loss. Not always strict as am not caused pain but try really hard!

And the probes were attached to a "gullibleometer"???

How much did this "expert testing" cost you???

Re: THE gluten-free thread
I made brioche rolls with poppy seeds recently. I put together my own measurements using up the last of an expensive gluten-free flour. Basically, I tried to incorporate plenty of butter and eggs and get a very soft dough . . . it was just a little too wet I think, but the end results was nice enough, could have had more lift. I will try this in silicone muffin molds next time. The non-stick cake pan that I coated well with butter, was nearly impossible to clean. MrP mistakenly scrubbed the finish off, so that went in to the shed for some future messy non-food use. I didn't mind. I hate those cake pans.
I used Cup4Cup gf flour which is quite expensive . . . but works like a dream in recipes. I hope the price comes down because I would buy it all the time if so.

Re: THE gluten-free thread
I will weigh the ingredients today and pass along the results. Going to make another batch using a less expensive flour.

Re: THE gluten-free thread
I used a different flour and another method which was very simple, but I am still not finished experimenting . . . may have to eat a lot of brioche before this is over.
eta: This method took almost no rising time, just a little in the molds and then they puffed up quite well, but they're not pretty - too craggy on top, so back to the drawing board. I used a bread flour mixture by Pamela's Products, last time I used Cup4Cup which is a very nice product and costs too much money! ![]()
I made rolls with currants this time.
