Re: Hare...
growing up we ate many , as my father was an avid hunter.. Many jackrabbits found their way onto the table, although my siblings and I didn't realize it for many years. It was just really good chicken to us for a long time til we starting asking why the chicken had four legs and no wings.

Re: Hare...
wine-o, google Jugged Hare. You could ask Mr Sainsbury how long the hare has been hung for.
Never had it myself but would like to. I love rabbit, so I'm bound to enjoy hare.

Re: Hare...
Dammit wine-o, I meant Mr Salisbury (market). Yes, they'll know and if they don't, sack 'em.
My apologies.

Re: Hare...
Hare is a much more 'gamey' taste than rabbit................if you like mutton as opposed to lamb...........pheasant as opposed to chicken..........then in all likelyhood you will enjoy it.
I cook Jugged Hare whenever the local farmers have a shoot (they are always kind enough to give me a brace). It is a lovely meat when hung a while, then cooked in red wine, spices/herbs, garlic & some good meat stock. I do add the blood near the end of cooking but, if you are a bit squeamish, you don't have to.

Re: Hare...
I love hare wine~o I agree with minerva that it can be much more gamey than rabbit, but that depends on how long it's hung. My husband hunts, and when he gets one (they've been a bit scarce this season because of the sodding linx) we tend not to hang it too long, normally only about a week. But I like to marinade it in oil, lemon and thyme, than grill or BBQ it. Delicious ![]()
