I watched a programme on milling and semolina was just the middle coarse mill of wheat.
At a pasta company i visited it was only semolina flour they used while most recipies seem to state 00 grad flour for pasta?
The US seems to stock semolina flour but i cant find it readily here.

You can't fully "Understand" Semolina until you've had it made as a pudding (Just milk and semolina stirred until it thickens)...served in a bowl...with grated chocolate on top.....

It must definitely be a subjective thing. I have childhood memories of this for breakfast (without the chocolate on top). The memories are *not* pleasant

I'm the opposite Maree, I spent years trying to replicate the 'cream of wheat' cereal I remembered from my childhood and was so excited when I discovered semolina porridge. As soon as I smelt it I was home!
I liked it best made with some currants and a little sugar.
I do understand that side of semolina Wine~o! ![]()

Joy, the stuff I had was plain with a little sugar. I didn't like it at all. That and porridge like glue and cold Weet-Bix, I think turned me off breakfast cereals for life.
I do use semolina in bread, pasta and for the treat business, though.

Mmm I am very fussy about the texture of my porridge: oats or semolina (or risotto!). I find it quite hard to eat what others have cooked, because I always make it exactly right! (lol!) Soft and gorgeous. No slabs or glue here! ![]()

this is new to me, I use it to make gnocchi alla romana, dusted with grated parmesan and melted butter, grilled in the oven until golden
I must try this sweet pudding
