Left over meat sauce - low carb?

Last night we splurged on our diet and made spaghetti bolognese.  Today it's back to low carb but I have lots of meat sauce left.  I could just freeze it and use it on our carb splurge next month or I could try to use it in low-carb dishes the next couple of days.  Any ideas?

You could either freeze it or top it with mashed sweet potatoes or cauliflower and have it as a pie.  Or could could peel the layers from the white part of a leek and make a low-carb lasagne with it, or you could serve it over courgette/zucchini strips instead of pasta, or you could make cauliflower "rice" and have it with that ...

Thanks Olivia, I have decided to make pasta-free lasagna with zucchini!  I'm going to make bechamel too, I know that's not carb-free but all in all the whole dish will be pretty low carb.

You could just eat it out of a bowl with some salad.

You could always stuff peppers or zucchini with the left over sauce.  Sprinkle with cheese and bake.

Should've bought more zucchini, the zucchini layer was a bit paltry.  But tasty.  I wonder if there are other vegetables I can make this with besides zucchini.  Not eggplant, hubby hates it.

The Hairy Bikers use leeks. They poach them first, if I remember rightly.

I recall a member a long while back suggesting a recipe for moussaka that uses artichokes instead of potatoes.  I want to try it, but not sure how she/he made it.

That might've been me.  I've used artichokes before.  None to be found these days.
