Silverside Slow Roast

I've got a 2Kg Silverside Joint and I would like to Slow roast it. What are the does and don'ts that I should be aware of? E.g. salting, covering, etc.

Could I use the Guardians Ultra-slow roast rump of beef recipe? (can't post links). If so would I just increase the time to 7 hours?

I quite like marinades and pastes, are there any good ones out there for silverside? How do they affect the roast?

Re: Silverside Slow Roast

Is this a corned silverside? I've had someone roast rather than boil one for me before and it was interesting. No idea how they did it though.

Can't see any reason why what you propose wouldn't work...I'd check the internal temperature at 6 hours...

Re: Silverside Slow Roast

I would cook it as I would brisket - pot roast, either on the hob or in a slow cooker.  The night before you could marinate it in red wine with some herbs and garlic.

Re: Silverside Slow Roast

Thanks guys,
I did the Guardian recipe, turns out it only took 5 hours so it was done a little too early, but I'll know for next time.
