I need inspirations...

I am gluten and lactose intolerant, due to another health issue I also cannot have anything with rice, potatoe and onion in it....
Does anyone have some recipes for me that I can experiement around with?

Would be awesome... smile

Re: I need inspirations...

One of my favourites is chicken breasts marinated in lemon juice, olive oil, thyme and garlic, then sauteed in olive oil - I generally serve this with green beans or with garlicky spinach, but any green vegetable would probably be delicious.

I often replace rice in dishes such as kedgeree with grated and steamed cauliflower, which works very well indeed, and you can often replace onions with leeks in recipes.  I often use coconut milk instead of normal milk or cream which works really well.  A quick curry dish which might be of interest to you is a couple of shredded leeks sauteed in coconut oil with the meat of your choice, with curry powder to taste and coconut milk for a creamy sauce, served on a bed of steamed, grated cauliflower.

You might find a lot of inspiration on this blog http://www.elanaspantry.com/ - I use it regularly for inspiration as we all have to eat gluten and grain free (no rice, or maize as well as the usual suspects), and my husband is lactose intolerant ...

Re: I need inspirations...

I baked some fish for my darling tonight , Bream prepared by the fishmonger, ( gutted , fins trinned  and scaled )
I fine sliced some fresh fennel ,
I cut the peel of a lemon and then sliced it into rounds.
I cut a smallish whole garlic bulb into half
I peeled and chopped a bit f fresh ginger into very fine matchstick shapes.

I scattered a touch of olive oil on the base of an oven proof dish
I placed the 3 bream onto the dish and then I filled the cavity with the fine chopped fennel , ginger and slices of lemon.
There was some spare so I tucked it unnder the fish and scattered it around the fish,
I placed the 2 halves of garlic beside the fish .
I scattered a bit of salt and olive oil over the fish then
I put it into the oven to bake .
near the end of cooking I put 2 halves of lemon into a small oven proof dish , cut side up and put them into the oven. The heat makes the lemn halves very juice and easy to sqeeze .

I would think that this would be good with a salad.
I am told that it was really lovely.
( I dont eat fish myself)

Re: I need inspirations...

Quiola is great , we eat a reasonable amount of it as you can use it for a base ingredient and add things to it , its as nice warm as it is cold.
I cook in by gently boiling it , soetimes in stock of sometimes plain water, then depending how I am going to use it I either cold it for making a salad of add what I want to it to make a hot dish.

I think it can be the base for a veggie burger as well but I have never tried this.
There is a good gluten free thread on the forum and I know that oliviascotland has workrd out a good bread roll recipe that is gluten free ... her recipes can be found here...
she has posted a number of gluten free recipes.
