we in Croatian coast often prepare meat under "peka". What is "peka"?
Originally "peka" is an very old type of roasting food, particulary meat, poultry and fish under specially made clay or cust iron hat which you heat before use on the heat brick surface ( sort of fireplace ). If you are enough skilled you may prepare
the most fantastic roasted meat ( speciality is sucking lamb under "peka" ).

we have just started cooking peka's at home and love them. They are great but always looking for ways to improve them! Any ideas gratefully received.
