BBQ whole chicken

Use our BBQ a lot - had kippers bbq d for breakfast.  Have just got a new BBQ with rotisserie and want to cook whole chicken tonight - any ideas on cooking or marinade please? question

I would love to try making my own rotisserie chicken.  You might like Peruvian 'pollo a la brasa' which is a popular take-out dish in our area.  It's always succulent and flavorful.  There are loads of recipes online for it.  I haven't made it myself, so can't give you a tested recipe.

The marinade we use for our bbq chicken is divine. 

- 2 heads of garlic
- 3 lemons, juiced
- handful of fresh parsley & thyme, chopped
- olive oil
- salt/pepper

1. Slice off the top of each garlic head.  Season with olive oil, salt and pepper and wrap in aluminum foil.  Roast for 45 min until the garlic softens.  Remove and cool.
2. Squeeze the roasted garlic into a mortar/pestle. 
3. Add the lemon juice, herbs and season to make the marinade.

You can continually baste your chicken with this as it is on the rotisserie.

If you don't have a rotisserie, (SP?) spatch co@ck the chicken and cook it for 15/20 mins each side..........


Unbelievably the word "Spatchc*ck" falls foul of the spam filter......

come to think of it.. you all seem a bit dodgy, I would keep and extra sharp eye on you too.  shocked  whistle  tongue

I've just checked the mirror and my eyebrows meet in the middle........

And my eyes are too close together........
