I used The French Laundry's pea anglotti dough.  I prefer to make half the recipe - it's yields a lot.   You can download it from the 'Cup 4 Cup' flour site or you can find it online pretty easily.

I've only used Cup 4 Cup ap flour to make fresh pasta.  It has xanthan gum in it and it's very finely milled.

I have to tweak my tart dough and will weigh everything and share the recipe soon . . . after a farm stand visit.

Jamie,

I made your fiery Dan Dan Noodles last night for the first time. I could write out my entire recipe variations for other folks who are interested, but here is the gist of it:

Use home made Chicken Stock (really adds depth and is GF)
Cook (home grown!) chard/ spinach in boiling stock for 1 minute and remove from pan.
Use Rice Pad Thai noodles (GF) which sit in stock for 3 - 4 mins, then return greens to pan to heat through.
Substitute Tamari for Soy Sauce.
I also did not have any chilli oil on hand so used 3 tbsps of GF Schezchaun Sauce and some fresh chopped red chilli.

This was a fantastic and easy dish.

Question for you: do you have a great Gluten Free vegetable burger recipe: no flour, oats or breadcrumbs please. I don't mind cooking in a pan as I know they often do not hold up on BBQ.

Our gluten free pancakes
4 eggs
250mL milk
about half a cup of gluten free flour (we use white wings plain gluten free flour mix)

Can be whisked together but lately I've been using the blender. The egg size can vary the thickness. Today's were small eggs so the batter was more pancakey than crepey.

Tried a gluten free pot noodle yesterday. It was dr mcdougals brand from the US and it was pad Thai flavour. It was small quantity but rather nice. Found it at a coles supermarket.

Found a new gluten-free flour blend here by Glebe Farm - plain and self-raising - which is not only gluten-free, but soy and corn free too!  If it's any good, it will be a godsend as No. 2 Daughter is allergic to wheat and corn ...
