The fourth episode of Jamie’s American Roadtrip finds Jamie touching down in Louisiana just weeks after Hurricane Gustav has wreaked havoc in New Orleans and the surrounding area. Despite the devastation Jamie finds a state full of people who use food as a way to celebrate life and keep the party going through adversity.

After his stay in New Orleans, Jamie journeys into Cajun country to spend time with an alligator-hunting grandmother, Sydnie Mae Durand, and restaurant owner Dave Allemond. This is the third time Dave’s restaurant has been destroyed by a hurricane but he is willing and ready to give things another go. Jamie joins the team as they rebuild the restaurant and prepare for the grand reopening!

The two main cultures here are Creole and Cajun. Creole food is a complete blend of influences: you’ve got Spanish, French and German cooking mixed with the herbs and ingredients of the Native Americans as well as those of the West Indian and African slaves. The Cajuns were the French Arcadians who settled around the bayous and swamps. Their cooking style was all about big bold flavours and one-pot cooking, and made use of wild game, seafood and anything else the bayou had to offer.
